Best of Brunch - Hash Brown Casserole
Yesterday, I finally believed Spring had arrived! The weather was perfect for an Easter egg hunt with our grandsons! We had a delicious brunch, the Easter bunny came and it was a beautiful day! We did eat our brunch inside because the pollen is so bad this year! Even after spraying the porch and back patio off, it was right back, covering everything! Luckily we have a room that is almost all windows so we were able to eat and feel as if we were outside!

I’m not sure if I’ve ever said this, but eggs aren’t my favorite things to eat. If I have to eat just eggs, I prefer hard boiled with lots of hot sauce…to cover the flavor! My family, however, loves eggs and I’m always trying to find an egg casserole that I like as well.
My daughter Lauren has celiac disease and can’t eat gluten and, as you know, most egg casseroles have bread. The other day, I went on a search for a casserole that would be delicious and gluten free…I found this one from The Spruce Eats. I tweaked the recipe slightly to make it mine and I it was very delicious! The addition of bell peppers gave this casserole great flavor and you can never go wrong by adding bacon. I fried the bacon on Saturday afternoon and assembled the casserole early Sunday morning. The baking time is rather long, so plan ahead when making this. The recipe is below! Enjoy!
What a difference a day makes…we woke up this morning to gloomy, cold rain. The high today is 55 degrees and I’m not happy…however, the birds are still chirping and it’ll be a good excuse to stay inside and get a few things done!
