Best BLT You’ve Ever Tasted!

Years ago when I was catering, I used to make stuffed cherry tomatoes for events. I stuffed them with a mixture of bacon, scallions, parmesan cheese, parsley and mayonnaise and they flew off the table…I could never make enough!

The other night when I was making Bacon Lettuce & Tomato Sandwiches for dinner, I decided to use that recipe to make a variation on the classic BLT and OMG, it was so delicious!

I simply added scallions, parmesan cheese, salt and lots of freshly ground black pepper to the mayonnaise and assembled the sandwich as usual except I added avocado…it was definitely a WOW! We loved this sandwich and the Crazy Blonde BLT Sandwich was born…I’ll never make it any other way! For the full effect, you must serve it with jalapeno potato chips…we even put them on the sandwich and I’m telling you, it’s definitely the way to eat this BLT!

If you want to serve a crowd, you could put out the ingredients for the sandwiches, toasted bread, sliced tomato, crispy bacon, a bowl of the Parmesan Mayonnaise, lettuce and sliced avocado and let guests assemble their own! Don’t forget the potato chips!

These sandwiches are as pretty as they are delicious!

Best Bacon Lettuce & Tomato Sandwich

This recipe is my take on a classic sandwich that everyone loves! Crispy bacon, toasted sourdough bread, romaine lettuce and garden fresh tomatoes with a secret ingredient!

Ingredients

  • 4 large pieces sourdough bread (or bread of your liking)
  • Olive Oil
  • Flaky sea salt
  • 1 cup mayonnaise (I use Duke's Mayonnaise)
  • 3/4 cup finely grated Parmesan Cheese
  • 4 scallions - white and light green part only, sliced thinly
  • salt and freshly ground pepper
  • Thick cut bacon, fried crispy
  • Romain lettuce
  • Fresh garden tomatoes, sliced into thick slices
  • Sliced ripe avocado

Instructions

  1. Drizzle the bread slices with olive oil and sprinkle with sea salt. Toast under the broiler until browned.
  2. Combine mayonnaise, Parmesan, sliced scallions, salt and pepper and stir to combine
  3. Spread mayonnaise mixture over bread (top and bottom slices), top with lettuce, tomato, bacon and finally avocado slices. Sprinkle with more salt and pepper if desired, top with another bread slice, cut in half and devour!
