Years ago when I was catering, I used to make stuffed cherry tomatoes for events. I stuffed them with a mixture of bacon, scallions, parmesan cheese, parsley and mayonnaise and they flew off the table…I could never make enough!
The other night when I was making Bacon Lettuce & Tomato Sandwiches for dinner, I decided to use that recipe to make a variation on the classic BLT and OMG, it was so delicious!
I simply added scallions, parmesan cheese, salt and lots of freshly ground black pepper to the mayonnaise and assembled the sandwich as usual except I added avocado…it was definitely a WOW! We loved this sandwich and the Crazy Blonde BLT Sandwich was born…I’ll never make it any other way! For the full effect, you must serve it with jalapeno potato chips…we even put them on the sandwich and I’m telling you, it’s definitely the way to eat this BLT!

If you want to serve a crowd, you could put out the ingredients for the sandwiches, toasted bread, sliced tomato, crispy bacon, a bowl of the Parmesan Mayonnaise, lettuce and sliced avocado and let guests assemble their own! Don’t forget the potato chips!

These sandwiches are as pretty as they are delicious!

I haven’t made the stuffed cherry tomatoes in a long time, but here’s what I put in them…
Mayonnaise
Grated Parmesan cheese
Bacon
Scallions
Put the cheese, bacon and scallions into a bowl and add mayonnaise to make a consistency that will hold up in the tomatoes…not too much! Sorry but I don’t have proportions.
These are so delicious – the most time consuming part is hollowing out the cherry tomatoes. I cut the top off and use the small end of a mellon ball scoop to get the seeds out.
