Baked Brie with Cranberries

I’ve been wanting to try this recipe for a while now and decided to take it to book club last night! That was a very good decision because otherwise, I would’ve eaten way too much of it! The warm cheese on the crunchy, toasted baguette slice is just too delicious!
I baked the brie in my 6 inch cast iron skillet that belonged to my grandmother! It’s one of my most prized posessions and I was thrilled to use it for this recipe! Since the skillet is so hot coming out of the oven, it’s good to place it on a board surrounded with bread and crackers and be sure to warn your guests! This appetizer won’t last long once you put it out because who doesn’t love brie! The almonds on top give it a nice crunch! Don’t be tempted to leave out the black pepper because it gives the cranberries a nice unexpected bite and the thyme is a delicious addition! Keep scrolling for the recipe!

Baked Brie with Cranberries
Ingredients
- 1 12.2 ounce wheel of Brie
- 1/2 cup fresh cranberries
- 1/2 cup maple syrup
- 3 strips of orange zest (make sure not to get the pith)
- 1 large sprig of thyme
- 1/2 teaspoon freshly ground black pepper
- Toasted sliced almonds
- Additional orange zest and thyme sprigs
Instructions
- Preheat oven to 350 degrees. Place cranberries, maple syrup, orange zest, thyme and pepper in a small saucepan and bring to a boil. Lower heat and simmer until cranberries are soft.
- Place brie in skillet and top with cranberry mixture, almonds and additional thyme and orange zest. Bake for about 10 minutes and serve warm with toasted baguette slices or crackers.

Make this ahead...assemble and bake right before serving.
