A Refreshing Watermelon Salad

This delicious watermelon salad couldn’t be any easier or any more refreshing! When I tasted it, I truly couldn’t believe how good it was…the combination of flavors that literally exploded in my mouth! I used a seedless watermelon and small cucumbers along with fresh mint from my neighbor’s yard! The mint gave the salad a really fresh summery taste and was perfect combined with the feta!

If you’re not going to serve the salad right away, wait and add the mint, feta and dressing right before serving so it looks really fresh and pretty. If you have salad any left over, the mint may get dark, but it’s still really fabulous and so good right out of the refrigerator. Don’t waste a bit of this!

I love to eat with the seasons because food tastes fresher, and is more nutritious…especially if you buy from local farmers. I’m planning a trip to the farmer’s market early tomorrow morning before it gets too hot and can’t wait to get home and make a fabulous dinner! I know they’ll have fresh corn, tomatoes, hopefully okra (our favorite), butter beans, lots of canned preserves and pickles and I’m also craving a homemade pound cake with peaches and whipped cream! Summer is for eating!

Even though it’s hot, I’ve still enjoyed sitting in them gazebo…working during the day and having dinner on the front porch! I don’t like to feel stuck in the house, so I have fans everywhere and I’ve been enjoying nature and our beautiful yard! Life goes by so quickly so I’m trying to make the most of every moment!

When you’re not serving in it, it’s so pretty on the counter with fresh fruit in it! The board is from Williams Sonoma and I use it often, as a cutting board and also as a cheese/charcuterie board.


Y’all…I love each and every one of you! And…these posts are a labor of love! I grocery shop, make the food (usually for a video on Instagram), clean up the kitchen, photograph the food, edit the photographs, type the recipe, put it all together on this blog and then…wonder if you like the post because not many people comment (thank you so much to those that do)!
