Roasted Carrot and Chickpea Bowls with Avocado
Bowls are very trendy right now and seem to be on every restaurant menu! and carrots are in season so why not make this Roasted Carrot and Chickpea Bowl with Avocado! I love this recipe because everything you need is in one bowl and the flavors are perfect together! It starts with roasted carrots and chickpeas and everything is topped with the most delicious pesto made with the carrot tops. Serve all with sliced avocado, a yogurt honey sauce, and warm naan bread. This recipe may sound a little complicated but I promise it's not. Also…you’ll have leftover pesto to use in other recipes or serve over warm pasta. If you’re short on time, you could substitute store bought pesto but it won’t be quite the same or quite as healthy! Eat this as a vegetarian meal, or throw some chicken or salmon on the grill to go with it. It's the perfect healthy combination and it's very delicious! It’s also what we’re having for dinner tonight…I’m adding grilled salmon!
We woke up this morning to temperatures in the 20’s and today will be very cold for a spring day, but luckily the weather is supposed to warm up and we’ll have 70’s for our Easter egg hunt on Sunday! I hope you all have a wonderful weekend! Let me know if you make this recipe!
