Grilled Corn & Peach Salad with Heirloom Tomatoes and Basil

With summer coming to an end, I was inspired to make something that had the feel of a summer harvest.  I went to our local farmer's market and found local corn, South Carolina peaches and local tomatoes and I created this Grilled Corn Salad.  I used basil from my garden and creamy goat cheese to make this salad extremely decadent!

I grilled the corn and peaches together and assembled the salad while grilling some chicken to go along side the salad.  After cutting the corn off the cob, and cutting the peaches into smaller pieces, I added the tomatoes, and made the vinaigrette.  The vinaigrette was tossed with the corn, peaches and tomatoes and I added the chopped fresh basil and crumbled goat cheese.  This is one of the easiest and tastiest salads ever.  It will make you want to savor the fresh flavors of summer and it's delicious the second day!

I'm a little sad to see summer come to and end because it went by so quickly, but at the same time, I'm excited for fall.  I hope you'll make this salad and savor those last fresh ingredients that summer has to offer.
