Pan Seared Eggplant with Buttermilk Dressing

Hi Everyone!  Today, I'm sharing my new favorite salad!  This salad is packed with healthy ingredients and it is so delicious!  I love anything with eggplant, goat cheese and pine nuts.  The pine nuts bring a little extra crunch to the salad along with the cucumbers.  It has a wonderful dressing made with buttermilk and sautΓ©d shallots (they are so yummy on their own) and it would be good on any number of things including a sandwich.  You'll have leftover dressing to experiment with if you like.  

I won't say that this salad was quick to make, but it was worth it!  It is also delicious leftover, just add more avocado the next day and have it for lunch.  I was alone for dinner so it was the only thing I made, but next time, I'll serve it with grilled skewered shrimp.  I hope you'll make it and let me know what you think!  I didn't include the pine nuts and goat cheese in the recipe because I added them at the last minute.  Add as much goat cheese as you like, you can't go wrong!  Enjoy!
