Easy Weeknight Dinner - Sheet Pan Shrimp and Vegetables with Rice

For so many people, this is back to school week, meaning back to schedules and trying to figure out dinner!  This easy Sheet Pan Shrimp and Vegetable with Rice recipe from the latest issue of Southern Living is a great go to recipe for a busy night!  I used packaged frozen and deveined shrimp from Costco (wild caught shrimp) and picked up everything else from the grocery store at the last minute.  The lemons that are roasted with the veggies combined with fresh time truly make this dish delicious!  I cooked my rice the old fashioned way, but you could use already cooked basmati rice from the freezer section to make it even easier.  I seriously doubt there will be leftovers, but if you happen to have some, just reheat slowly in the oven with a tablespoon or two of water added!
