Easter Bunny Fun and Mac and Cheese for a Crowd

Easter was so much fun this year!  It came and went too quickly!  I was so excited to have everyone here (except Rebecca who we missed so much) for the weekend.  I realized early on that I had to let go of everything being in order and just go with the flow because it was a little chaotic.

On Saturday, Jackson, Will's nephew came over to play and we had a fun game of softball!  Everyone got a chance to hit the ball, even Hudson!  We had grilled chicken for dinner and just spent time together.

Sunday, I got up early to make lunch.  My sister and her family came and brought my Mom and Dad.  We had a crowd...12 people around the dining room table.  I made a Salmon Salad that I've been making for years, Macaroni and Cheese, Asparagus with Pancetta, and a buttermilk pie!  Catherine brought deviled eggs, beautiful fruit, including strawberries from a local farm, gluten free cornbread (you would never know the difference) and fabulous gluten free chocolate cookies.  I'll get all of the recipes on the blog very soon.  We had a feast, cleaned up the kitchen and had an Easter egg hunt.  It was a whirlwind of a weekend.  Lauren, Chris and Hudson got up early this morning and started the drive back to Atlanta.  It was so sad to see them go, but they'll be back in a couple of weeks for a friend's wedding!

I hope everyone had a nice weekend!  It seems like this year is flying by so quickly and with summer coming and lots of potluck dinners and casual entertaining, I thought you might like my Mac and Cheese recipe.  It feeds around 25 people so feel free to halve it although it's so nice to have leftovers in the refrigerator.

Hudson made quite a mess eating a chocolate cookie on his Uncle Gene's lap!  We decided it was best to take his shirt off!

Jackson is a beautiful child (we share the same birthday) and is very athletic!
