A Sweet Treat - Lemon Almond Cake

The recipe for this cake comes from a cooking class that Rebecca and I took in Boston at Sur La Table.  It is for Lemon Almond Cake, translated Dolce di Amalfi, in Italian.  Lemon trees are abundant along the Amalfi coast and honey and almonds are also common ingredients.  This cake highlights the abundance of this beautiful sun-dappled region.

One of the star ingredients in this cake is honey.  Honey makes this cake moist and delicious and combined with the almond flour also makes it healthy!  

Honey is a magical ingredient and without bees, obviously we wouldn't have honey.  Bees are crucial to our survival!  One third of the food on our planet is dependent on pollination.  If pollen weren't passed on from on plant to another, we wouldn't have flowers, fruits or vegetables.  If bees ceased to exist, humans wouldn't survive for very long! 

It is so important to support local bee keepers because they are caring for the bees that pollinate our food!  I encourage you to buy local honey to make this tasty Lemon Almond Cake!
