Trisha Yearwood's Chicken Tortilla Casserole
I made this fabulous Chicken Tortilla Casserole on Sunday night for dinner. I'm trying to spend as much time as possible with Lauren, Chris and Hudson before they leave on Friday, so I decided to have everyone over for dinner. Cooking wasn't really at the top of my list of things to do Sunday night, because I had cooked so much for Sarah's wedding. I decided to make this really rich and hearty casserole because it's easy to prepare and feeds a crowd.
Trisha Yearwood is known for her delicious recipes and this is definitely one of them! Next time I make it, I might add a can of drained black beans and top it with some crumbled tortilla chips for crunch and some chopped green onions for color. This casserole is also very good reheated if you happen to have leftovers. I served it with a green salad with red peppers and avocado, tossed with a simple vinaigrette. This recipe is one that I plan to include in a cooking class in the fall and I will make again and again!

I'm sad that this week is going by so quickly because Lauren and Chris leave on Friday! I'll be going to Atlanta on February 28th to visit and help them get settled. I can't wait to share my trip with you!
