Smoked Chicken Salad with Blueberry Vinaigrette

Have I mentioned that I love an easy chicken salad recipe that feeds a crowd and everyone loves?  This wonderful chicken salad fits the bill for most any occasion!  I made it for Sarah's wedding reception because it seems special but is so easy to do ahead and assemble at the last minute.  The presentation is beautiful and everyone loves it!  What could be better than that!

I smoked the chicken in a stovetop smoker, cut it into pieces and put it in the refrigerator.  Alternately, the chicken could be grilled, but the smokey flavor of the chicken is really wonderful mixed with the other ingredients.  After the chicken is smoked, toss it in the blueberry vinaigrette, spread over salad greens and top with bacon, toasted pecans, red onion and finally blueberries.  Apples could be substituted for the blueberries and would be wonderful in the fall.
