Soup Recipe for a Chilly Evening - Spicy Sausage and Chickpea Soup
Soup is the epitome of comfort food! There is nothing better than a wonderful soul warming bowl of soup filled with the best ingredients and fantastic flavors. As the days get shorter and the evenings get cooler, this hearty Spicy Sausage and Chickpea Soup is the perfect choice for dinner. I have always loved soup in the fall and winter and this recipe is nutritious and easy to make and is actually better the second day after the flavors have had a chance to meld. The recipe doesn't call for Parmesan cheese, but I sprinkled a little on top along with some garlic olive oil and really liked the flavor! Serve this soup with a green salad, crusty bread and a great bottle of wine and you have an easy meal with leftovers for the next day! Soup days are here! I hope you enjoy!
