Leek and Gruyere Quiche with Olive Oil Crust

Caramelized leeks paired with nutty Gruyere cheese make this delicious tart perfect for a light dinner or a weekend brunch! The leeks give this quiche a rich and flavorful taste as they meld into the tender olive oil crust!  

The pastry is easier to work with because of the olive oil than a butter crust because it's not as crumbly, but a store bought crust would work equally as well in a pinch!  You will feel as if you've been transported to a French cafe as you're eating this tart!  Serve with a green salad and a glass of Rose!
