Spicy Tofu Stir-Fry with Bok Choy
Quick and easy meals with leftovers that taste great the next day are what we are all looking for on busy weeknights. This recipe for Spicy Tofu Stir-Fry with Bok Choy is another favorite from Eating in the Middle by Andie Mitchell. The recipe can be thrown together quickly and it is so healthy and delicious that no one will miss the meat! The sauce is absolutely delicious over the still crunchy vegetables and tofu! Brown rice is the perfect addition to this simple stir fry and if you have a rice cooker, you can cook the rice ahead.
Cook the tofu in a nonstick skillet until it is golden brown and crunchy.
Add the snow peas and red peppers to the skillet and cook until starting to soften, but still crunchy.
Next, add the bok choy, garlic, and ginger and saute for about 2 minutes.
Everything goes back into the skillet with the sauce.
Serve over brown rice.
