ENDLESS SUMMER DAYS!

Our first day at the beach was so nice!  We headed out around noon for East Beach and spent the afternoon reading, walking and enjoying the beautiful weather!  There was a nice breeze and the water was the perfect temperature.  I wore this classic Tory Burch tunic with a bathing suit from Ann Taylor that I got last year.  It was such a coincidence that the reds matched perfectly.

After the beach we did some grocery shopping and reading on the porch and then made Spicy Chicken Burritos.  They were the perfect dinner...easy and delicious!  Keep scrolling for the recipe!

This S'well bottle holds an entire bottle of wine and keeps it cold for hours!  What could be better than that?  I do need to figure out a better glass to drink from!

We met this adorable dog on the beach.  He would lie in the sand and look at you until you threw the ball for him!

For the burritos, I grilled the chicken, assembled the burritos and then put them back on the grill!  The tortillas got really crispy and the cheese and guacamole melted together...delicious!

This recipe is literally one of the easiest things I've ever made! I think grilled chicken has a better flavor but in a pinch you could use shredded chicken from leftovers or from a rotisserie chicken.  I used guacamole because the grocery store was out of avocados but luckily we had picked up some guacamole from Whole Foods on the way here!  I think the guacamole was probably better than the diced avocados because it made the burritos a little spicy!
