ROASTED VEGETABLE, BEAN AND HERB SALAD

This salad was seriously so good that I can't even describe it!  When I saw the recipe, I knew I had to make it and I knew it would be good, but it was divine!  The flavors blended together perfectly!  I wish I could give you all a bite and I know you would agree with me.  The ingredients could easily be changed a little to fit the season or whatever you have in the pantry or refrigerator.  Next time I make it as a main dish, I will add just a bit of goat cheese, but I think my favorite way to eat it would be with a piece of grilled salmon.  Don't get me wrong, it is absolutely delicious just I made it, but I'm always thinking of ways to make my recipes different.  It was really easy to make and so tasty but also healthy!  I showcased the salad in beautiful handmade bowls made by my daughter Rebecca!  These bowls are my favorites for salad and soup, and they are also great for nuts and chips!  You can see more of her beautiful work on her website, Rebeccaleighsmith.com.

The tomatoes are roasted with olive oil, chopped fresh rosemary, chopped fresh thyme and salt.

I roasted the potatoes and onion slices together with olive oil, chopped fresh rosemary, chopped fresh thyme and salt.IMG_1159

I also put the salad in a bigger bowl to show what it would look like on a buffet for more than one person.  It makes a beautiful presentation!
