MEMORIAL WEEKEND FUN AND MY FAVORITE BLACK QUINOA CHOPPED SALAD
Hi everyone! I hope it's been a great weekend so far! Yesterday was such a special day for Mr. Crazy Blonde and me because we got to spend time with Lauren and Hudson at the pool. He didn't like the water so much at first because it was cold, but it wasn't long before he changed his mind and decided that he loved it! He splashed and played until he couldn't hold his eyes open for another minute! It is so much fun watching him grow up!
It was a perfectly beautiful day to put the top down on my car for the drive to the pool!
Mr. Crazy Blonde or Pop as we're calling him was happy to sit in the shade with Hudson!
It was time for a nap after playing so hard!
I have this pool bag all packed and ready to go, but I didn't take it today because I'm waiting to find the perfect bathing suit and coverup to go with it!
Later in the evening, we put some chicken on the grill and I made a Black Quinoa Chopped Salad to go with it! I love the nutty taste and the dramatic color of black quinoa, but you can use any quinoa you like. You could also substitute couscous or farro. The fruits and veggies could be whatever you have in the refrigerator, so you can see how versatile this salad is. I added avocado to the top for garnish, but it would be delicious mixed into to the salad. I served the quinoa salad as a side with our grilled chicken, but it is satisfying enough for a vegetarian dinner or lunch with the addition of a green salad.
The weather is turning here in North Carolina, the sun is going away and it's supposed to rain. Mr. Crazy Blonde and I are going to one of our favorite restaurants, Undercurrent, for brunch and then I'm going to catch up on some things at home!
