SPRINGTIME LUNCH WITH FRIENDS
I am so lucky to have such a diverse and dynamic group of friends! My friends are entrepreneurs, working mothers, new mothers, volunteers in the community, soon to be grandmothers and all the while very creative and giving people. Today, I teamed up with Michelle's Kitchen and Catering (read more about Michelle here) to celebrate these women with a special lunch. We talked, relaxed, reminisced and ate delicious food! It turned out to be a beautiful, but still cool spring day! It was just the sort of afternoon we all need to take every now and then...time to just stop the running around and enjoy the company of friends.
We kept the menu for the afternoon light, simple and delicious.
Grilled Chicken Salad - assorted baby lettuce, kale, freshly picked local strawberries, local asparagus, local goat cheese from the Goat Lady Dairy and a homemade orange vinaigrette!
Homemade Gluten Free Key Lime Pie
Michelle supports our local farmers by using as many local ingredients in her cooking as possible.
We started with a glass of sparking Rose! It was the perfect beginning to a Spring lunch!
This room in our home is one of my favorites! It feels bright and happy with so much sunlight coming in!
I served the very best Southern starter...pimento cheese! I love it with these sweet crackers, it's the perfect combination of sweet and savory!
One of the most special guests was baby Fiona Grace Gaither (last seen here)! She slept almost the whole time but was still the center of attention!
Sarah made a surprise appearance. Just long enough to have her picture made!

We took some time before lunch to catch up with each other. We are all so busy and it's important to reconnect!
Stacey is in the middle in this photo and is expecting her first grandchild in a month!
Hudson spent most of the afternoon with one sock on and one sock off!
He wanted so badly just to touch Fiona!
Michelle sent all of the ingredients for the grilled chicken salad individually (and beautifully packaged). It was so easy to assemble the salads and serve so that I had time to enjoy the party!
I had set the table the night before so all I had to do was put the food out!
There is nothing quite like holding a new baby! Fiona Grace is so peaceful and beautiful!

Michelle made a decedent Key Lime Pie for dessert and I added some fresh raspberries for color! She also made it gluten free by using gluten free graham crackers.
We ended the day on a happy note! It was a very special afternoon!
