ROASTED BEET SALAD WITH MARCONA ALMONDS AND GOAT CHEESE

This warm beet salad is indescribably good!  The flavors meld perfectly together and make a beautiful combination!  Make it for a quick easy lunch or light dinner or serve with grilled chicken or salmon for a heartier meal.  Either way it is beautiful, healthy and delicious!

I used a lovely Tuscan Rose and Peppercorn Blend by Bella Cucina with flaky salt in addition to the black pepper.  This step is totally optional, but it made the salad look beautiful!
