STRAWBERRY BALSAMIC MUFFINS
A couple of days ago, I picked up the latest issue of Bake From Scratch Magazine. There were so many wonderful sounding recipes that it was hard to decide which one to make. I finally settled on this one for Strawberry Balsamic Muffins because I had strawberries in the refrigerator. It was an excellent decision! These muffins are divine! Right before baking, swirl a teaspoon of balsamic reduction into the batter and then sprinkle with turbinado sugar. The whole flavor combination is very sophisticated and so delicious!
Chop the strawberries into small pieces.
Boil the balsamic vinegar until it thickens and coats the back of a spoon.
Freshly squeezed orange juice is added to the batter.
Swirl in the balsamic reduction with a wooden stick.
I had Balsamic Reduction left over and it will be excellent in salad dressings or drizzled over roasted vegetables.

These muffins are definitely worth the effort. The aroma makes the whole house smell like a bakery!
