CRAZY BLONDE CHICKEN AND BLACK BEAN TORTILLAS
This might be one of the easiest dinners you will ever make and it is sooo good! Yesterday was a busy day for me but I still wanted to make something healthy and satisfying for dinner that everyone would like! So with the help of my assistant (and hungry daughter) Sarah, we came up with Black Bean and Chicken Tortillas. The ingredients below are things that you might already have on hand! I put the chicken into the slow cooker with a jar of salsa and it cooked for about six hours. The fabulous aroma of the chicken and salsa spread over the whole house! It's so nice to come home to a house that smells like dinner is ready!
I used purchased guacamole and salsa, but if you have plenty of time there is nothing like homemade!
The chicken after it has slow cooked for 6 hours.
Saute the onions in olive oil.
Add 2 cans of black beans and salt to taste.
Have your assistant stir and watch the onions so they don't burn!
A taste test is always a good idea!
The finished plate! Add lettuce, guacamole, avocado slices ( you can never have too much avocado), shredded cheese, sour cream, more salsa if desired. Serve with a warm tortilla!
CHICKEN AND BLACK BEAN TORTILLAS
4 chicken breasts, frozed
1 jar of salsa (I used Newman's Own medium)
3 tablespoons olive oil
1 yellow onion, diced
2 28 ounce cans black beans
Salt to taste
Place frozen chicken breasts into slow cooker with 1 jar of salsa. Cook for 6 hours or until the chicken can be easily shredded with two forks.
Saute onion in olive until soft. Add black beans and stir until warm. Add salt to taste.
Serve chicken and beans over a warm tortilla topped with cheese, guacamole, avocado, lettuce, salsa and sour cream.
