TOMATO PIE
Where else but in the South would a pie made with tomatoes be so popular. Tomato pie is perfect in the summer when the tomatoes are fresh and abundant, but it is also really great in the winter when we all are are wishing for summer to get here. Another bonus...tomatoe pie freezes beautifully!
TOMATO PIE
2 frozen deep dish pie crusts
12 roma tomatoes, diced
1-1/2 cups mayonnaise (I used siracha mayo for 1/2 cup)
1 cup of grated Italian Blend Cheese
1/2 cup of Feta Cheese (if desired - this is optional but I like it)
3/4 cup of grated Parmesan Cheese
1 teaspoon dried oregano
2 tablespoons roughly chopped fresh basil (or to taste...if you like a lot of basil, then add more)
Salt and Pepper to taste
Mix ingredients and place into partially baked pie crust
Top with extra cheese and bake for 45 minutes at 350 degrees
Let cool for 10 minutes and sprinkle with extra chopped basil to serve.
Serve with a fresh corn salad and watch while watching The Devil Wears Prada. This combination makes for the perfect evening!
