Kale, Caramelized Onion, Potato and Goat Cheese Frittata

Last night for dinner we needed something light and quick and this is what we came up with!  I wanted to share the recipe because it really was great and the leftovers were perfect for breakfast this morning!

Kale, Caramelized Onion, Potato and Goat Cheese Frittata

1 large yellow onion, sliced

3 medium potatoes - (I used Yukon Gold)

1 bunch curly kale, stems removed and cut into pieces

8 ounces goat cheese

10 extra large eggs

1/2 cup half and half

1/2 cup Havarti Cheese, grated

Slice onion and saute in 2 tablespoons unsalted butter and 2 tablespoons olive oil in a 12 inch cast iron skillet until very tender and golden (about 20 minutes on medium low heat).

Dice potatoes and drizzle with olive oil, salt and pepper and roast at 400 degrees for about 20 minutes or until tender and crispy.

When onions are golden, add sliced kale to pan and saute with onions until the kale has wilted.  Add roasted potatoes and stir to combine.

Sprinkle onions, kale and roasted potatoes with crumbled goat cheese.

Whisk eggs with half and half and salt and pepper to taste. Pour egg mixture over vegetable mixture.  Bake at 400 degrees for 15 to 20 minutes.  Check for doneness after about 10 minutes.  Remove from oven and sprinkle with grated Havarti Cheese.  Place back into oven just long enough for cheese to melt.  Slice and serve with a green salad.
