15 Healthy Recipes to Make for Dinner in January

When the holidays roll around, I really look forward to eating my favorite rich indulgent foods, but by the time January gets here, I’m done. All I want is light and healthy…lots of salads, fresh veggies and fish. I have also really loved tofu and it’s really quick and easy to prepare.

Last night, I pulled out some leftover salmon, chicken that I had made in the crockpot for tacos, salad greens, goat cheese, avocado and made some coconut rice. Baldy and I made our own bowls with these ingredients and it was delicious! If you haven’t made my famous coconut rice, you really need to try it because it’s the best rice ever. I make it in my rice cooker and it goes well with most everything and since it has coconut milk as an ingredient, it doesn’t dry out in the refrigerator so leftovers are amazing!

I suspect I’m not the only one wanting to eat healthier in January so here are 15 delicious and healthy recipes to make this month!
